Guacamole
How can something so good be soooo good for you? Good fats! From “Grain Brain”, by Dr. David Perlmutter (page 89), “…while the synthetic trans fats found in margarine and processed foods are poisonous, we know now that monounsaturated fats — such as the fat found in avocados, olives and nuts — are healthy”. So enjoy some guacamole today!
Guacamole
Who knew that something this green could taste so good!

Equipment
- Fork, chef's knife & cutting board. (A potato masher works too.)
Ingredients
- 2 ripe Avocados
- 2 T Red onion diced
- 1 T Jalapeño (pickled) diced
- 1 clove Garlic diced
- 2 T Cilantro chopped
- salt to taste
Optional
- Lime juice
Instructions
- Cut avocados in half and remove the stone (seed)
- Use a large spoon to scoop out the avocado and place in a bowl
- Mash avocado with a fork or masher to desired consistency, then set aside
- Dice red onion, jalapeños and garlic, then chop cilantro and add to the avocado. If using lime juice, add it now.
- Mix well and add salt to taste
- Serve with your favorite corn chips or for a real treat, try it with raddish chips
Notes
- The optional lime juice adds to the flavor and helps keep the guacamole from turning brown. Start with a teaspoon and adjust to taste.
- Kosher salt is our favorite
- If all you have is avocado and salt – use it!
