Guacamole
Who knew that something this green could taste so good!
Prep Time 20 minutes minutes
Servings 4
- 2 ripe Avocados
- 2 T Red onion diced
- 1 T Jalapeño (pickled) diced
- 1 clove Garlic diced
- 2 T Cilantro chopped
- salt to taste
Cut avocados in half and remove the stone (seed)
Use a large spoon to scoop out the avocado and place in a bowl
Mash avocado with a fork or masher to desired consistency, then set aside
Dice red onion, jalapeños and garlic, then chop cilantro and add to the avocado. If using lime juice, add it now.
Mix well and add salt to taste
Serve with your favorite corn chips or for a real treat, try it with raddish chips
- The optional lime juice adds to the flavor and helps keep the guacamole from turning brown. Start with a teaspoon and adjust to taste.
- Kosher salt is our favorite
- If all you have is avocado and salt – use it!
