Guacamole

Who knew that something this green could taste so good!
Prep Time 20 minutes
Servings 4

Equipment

  • Fork, chef's knife & cutting board. (A potato masher works too.)

Ingredients

  • 2 ripe Avocados
  • 2 T Red onion diced
  • 1 T Jalapeño (pickled) diced
  • 1 clove Garlic diced
  • 2 T Cilantro chopped
  • salt to taste

Optional

  • Lime juice

Instructions

  • Cut avocados in half and remove the stone (seed)
  • Use a large spoon to scoop out the avocado and place in a bowl
  • Mash avocado with a fork or masher to desired consistency, then set aside
  • Dice red onion, jalapeños and garlic, then chop cilantro and add to the avocado. If using lime juice, add it now.
  • Mix well and add salt to taste
  • Serve with your favorite corn chips or for a real treat, try it with raddish chips

Notes

  • The optional lime juice adds to the flavor and helps keep the guacamole from turning brown. Start with a teaspoon and adjust to taste.
  • Kosher salt is our favorite
  • If all you have is avocado and salt – use it!
