Naked Black Bean Tacos
Otherwise known as tacos in a bowl. Don’t let the lack of a taco shell keep you from having a taco, just put it in a bowl, plus it’s faster. This recipe calls for black beans, but you could also use your favorite fish. We’ve even done them with salmon fish burgers! (If you really want shells, check the video at the bottom of the page.)
Naked Black Bean Tacos
Can be served with corn taco shells or flour tortillas if naked is not your thing!
Equipment
- Medium or small sauce pan for heating the black beans
Ingredients
- 1½ C Purple cabbage, thin sliced
- 1 T Red onion, very thin sliced
- ¼ C Cilantro, chopped
- 1-2 T Jalapeño peppers (pickled)
- 1 can Black beans (15 oz.)
"Secret Sauce"
- ½ C Veganaise (non-dairy mayo) regular mayo works too
- 3 t Chipotle Tobasco sauce
Instructions
- Heat black beans in sauce pan (with juice) until heated through
- While beans are heating, chop veggies and place in separate containers
- Prepare sauce by adding Veganaise and Chipotle Tobasco to a small mixing bowl and mix together
- Serve in bowls by layering beans, veggies and sauce
Options
- Dice 1 avocado for topping
- No taco shells for Naked Tacos, but feel free to use shells as you like. We've been making our own – it's easy!
- Make fish tacos by using cooked salmon burgers instead of black beans, just crumble them after cooking.
