Huevos Rancheros
We love Huevos Rancheros, though we’ve taken some liberties with our recipe in order to make it more vegan friendly. And if gluten is something you’d like to avoid, we have an option for that too. (Skip the tortilla and you’ve got naked huevos!)
Huevos Rancheros
Not your typical Huevos – gluten free and dairy free
Servings 1
Equipment
- sauté pan and a sauce pan
Ingredients
- 1 15 oz. can Black beans
- 1 egg (cage free preferred)
- Jalopeno peppers
- Salsa – your favorite
Instructions
- Heat the black beans in the sauce pan, bring to a boil then reduce to simmer
- Cook egg – over easy or sunny side up
- When the egg is almost ready, add beans to serving bowl, then add egg on top
- Add a few jalapeno peppers and salsa
Notes
We like to add chopped avocado on top to make it even better! Enjoy.
