Fennel Salad

Equipment

  • Chef's knife, cutting board, and juicer

Ingredients

  • 1 med Fennel bulb core removed, thinly sliced
  • 2 Garlic cloves minced or pressed
  • 1 T Lime juice
  • 1 T Olive oil extra virgin
  • 1 Orange – slice then dice into small pieces
  • ¼ C Kalamata olives

Instructions

  • Cut fennel stems and core end off, cut bulb in half, lenghwise. Thinly slice each half
  • Put all ingredients into a bowl, stir and serve
