Pasta Salad
We use brown rice flour noodles for this recipe, so it’s gluten free. A quick and easy recipe, but do allow time for chilling the pasta.

Equipment
- Soup kettle (stock pot), chef's knife & cutting board
Ingredients
- 1 pkg. Brown rice pasta
- ½ C Artichoke hearts (include liquid)
- 1 15 oz. can Black olives
- 1 C Cherry tomatoes quartered
- ¼ lb. Mushrooms quartered
- 2 T Parsley
- Salt & pepper to taste
Instructions
- Cook pasta per instructions and chill
- Add all other ingredients and toss
- Serve adding salt & pepper to taste
Options
- Green or red onions
Notes
Try it with toasted nuts or seeds.
