Garbanzo Spread
We like garbanzo spread on rice cakes, but you could just eat it out of a bowl or served as a side dish. Did you know garbanzos are high in protein too?
Garbonzo Spread

Equipment
- Potato masher and chef's knife
Ingredients
- 1 can Garbonzo beans (15 oz.)
- 2 Celery stalks, finely chopped
- ½ C Red pepper, finely chopped
- 3 Green onions, finely sliced
- 1 T Lemon juice, fresh (or lime)
- 1 Garlic clove, minced or pressed
- ¼ C Dill pickles, finely chopped
- 3 T Vegan mayonnaise or regular mayo
- 2 t Mustard
- 1 t Dill weed
- Salt & pepper, to taste
Instructions
- In a large bowl, mash garbonzo beans with a potato masher – leave it somewhat chunky
- Add all other ingredients and mix
- Serve on rice cakes, on bread/toast, or just by itself in a bowl
