Garbanzo Spread

We like garbanzo spread on rice cakes, but you could just eat it out of a bowl or served as a side dish. Did you know garbanzos are high in protein too?

Garbonzo Spread

Equipment

  • Potato masher and chef's knife

Ingredients

  • 1 can Garbonzo beans (15 oz.)
  • 2 Celery stalks, finely chopped
  • ½ C Red pepper, finely chopped
  • 3 Green onions, finely sliced
  • 1 T Lemon juice, fresh (or lime)
  • 1 Garlic clove, minced or pressed
  • ¼ C Dill pickles, finely chopped
  • 3 T Vegan mayonnaise or regular mayo
  • 2 t Mustard
  • 1 t Dill weed
  • Salt & pepper, to taste

Instructions

  • In a large bowl, mash garbonzo beans with a potato masher – leave it somewhat chunky
  • Add all other ingredients and mix
  • Serve on rice cakes, on bread/toast, or just by itself in a bowl
