Pasta Salad

We use brown rice flour noodles for this recipe, so it’s gluten free. A quick and easy recipe, but do allow time for chilling the pasta.

Total Time 45 minutes

Equipment

  • Soup kettle (stock pot), chef's knife & cutting board

Ingredients

  • 1 pkg. Brown rice pasta
  • ½ C Artichoke hearts (include liquid)
  • 1 15 oz. can Black olives
  • 1 C Cherry tomatoes quartered
  • ¼ lb. Mushrooms quartered
  • 2 T Parsley
  • Salt & pepper to taste

Instructions

  • Cook pasta per instructions and chill
  • Add all other ingredients and toss
  • Serve adding salt & pepper to taste

Options

  • Green or red onions

Notes

Try it with toasted nuts or seeds.
