Peeling Garlic
What’s the best way to peel garlic? Here’s how we do it.
Start by separating the garlic cloves from the bulb, then cut off the stem ends of the cloves using a chef’s knife. At this point there are two techniques that we’ve used. 1) Use the flat side of the chef’s knife to rock the clove back and forth a little, which will break the skin loose, or 2) pinch the clove between your left and right thumbs and fore fingers and twist back and forth to achieve the same effect.
Once you’ve got the skin loose and peeled away, you’ll need to decide what your end goal is, for example, do you want slices, minced or pressed. Generally, the smaller the pieces of garlic you end up with, the more flavor that will be released. So, if you want to taste the garlic more go for minced or pressed – less, try slicing.
